Market Inspiration for Spring

Spring has finally sprung and there is an abundance of fresh market items to inspire your meals as we leave those cold months.  We leave behind the hearty and tasty stews and soups that we have used to sustain us through the winter months and transition to fresher foods.  This is the time to choose fruit for dessert and the best type of vegetables for fresh and quick meals.  Take a look at this list and plan your springtime meals ahead of time to welcome in the new weather and produce.

                          asparagus                    avocados       
                          baby carrots               cucumbers
                          green onions               kale 
                          leeks                            strawberries

asparagus: steam, then drain and toss with butter and freshly grated parmesan cheese

kale: saute in olive oil, add a broth and simmer until tender for about 5-10 minutes

asparagus or sugar snap peas:  steam until tender and then toss with a tangy vinaigrette

young potatoes: roast in olive oil, salt, and pepper in an oven at 425 for 30-45 minutes
