This is the time to start thinking about soups and stews that nourish you through the cooling season. Cook hearty meat and roasts and comforting pasta dishes that will fill you up. It's an opportunity to simmer and braise your food. And plan meals that will leave you extras for future meals. Your future self will appreciate these extra easy meals, or those you live with surely will.
Quick Recipes:
Sweet Potatoes: roast whole sweet potatoes in 400 degree oven until tender for 50 minutes. Make sure to prick them with a fork a few times before cooking. When finished serve with molasses or flavored butter.
Broccoli or Cauliflower: obtain florets then stir fry with minced garlic and red pepper flakes.
Carrots: Grate, toss with a vinaigrette, preferably mustard one. Add fresh parsley or green onions as garnish.
Beets: Put the beets in foil and roast at 400 degrees until they are tender, 1 to 1.5 hours. Peel the beets and cut into wedges and toss with vinaigrette and fresh herbs.
